Lockdown Day 93 – In the Kitchen
Our lockdown series is approaching its final week and as such, this will be our final ‘in the kitchen’ post. Over the lockdown period we have brought you some fun ideas and recipes for you and your children to enjoy and we hope that you have enjoyed preparing them and eating them as much as we have enjoyed bringing them to you.
We would like to take this final opportunity to share a firm favourite in our office. The following recipe comes from our most efficient office manager, who surprises us from time to time with these very decadent and very delicious treats!
*RUSHNI’S SUPER-YUMMY CHOC CHIP COOKIES*
YOU WILL NEED
As always, work with the child to develop good planning skills, and first collect all the utensils that you will need.
- Two bowls
- Wooden spoon
- Sieve
- Electric beater
- Two dessert spoons
- Measuring cups and measuring spoons
- Wax paper or Spray and Cook
- Baking tray
- Spatula
- Cooling rack
INGREDIENTS
Assist the child in collecting and measuring out the required quantities of the ingredients so that everything is prepared for the actual making of the biscuits.
- 225g butter
- ¾ cup + 1 tablespoon white sugar
- ¾ cup brown sugar
- 2 large eggs
- 1½ teaspoons vanilla essence
- 1¼ teaspoons lemon juice
- 2¼ cups flour
- ½ cup rolled oats
- 1 teaspoon salt
- 1 teaspoon baking powder
- A pinch of cinnamon
- 1¾ cups of walnuts/pecans
- 2½ cups semi-sweet chocolate chips
METHOD:
Preheat the oven to 150C.
1. Ask the child to place the butter and the white and brown sugar into one of the bowls. Mix with the electric beater for about 2 minutes.
2. Ask the child to add the eggs, vanilla essence and lemon juice and mix on a low setting for 30 seconds thereafter turning up the speed for another 2 minutes. This is a good gross motor strengthening exercise! Use a timer to give the child an indication of the length of time. Set this bowl aside when done.
3. Invite the child to sift the flour and baking powder into the second bowl and then add the cinnamon and salt. Use the wooden spoon to thoroughly mix these dry ingredients by stirring carefully.
4. Assist the child in slowly adding the dry ingredients to the bowl of wet ingredients. You may wish to ask the child to spoon the dry ingredients into the wet ingredients bowl as you do the mixing. Once all the dry ingredients have been added continue to mix for about a minute.
5. Ask the child to add the chocolate chips and nuts to the mixture and stir in with the wooden spoon.
6. Assist the child in lining the baking tray with a sheet of wax paper, or spray it evenly with Spray and Cook.
7. You may need to demonstrate the following procedure once or twice for the child to copy: using the two tablespoons, take a scoop of the mixture from the bowl with one tablespoon, and use the second tablespoon to scrape the mixture onto the tray.
8. Gently flatten the scoop by pushing down on it with the back of the spoon.
9. The cookies will approximately double in size, so you need to leave enough space between the scoops as you fill the baking tray.
10. Bake for 30 minutes. Use this time to clean up the kitchen and all the utensils that you have used. Prepare the cooling rack.
11. Remove the baking tray from the oven and invite the child to carefully lift the cookies from the baking tray with a spatula, and place on a cooling rack.
12. Leave the cookies to cool.
